Mixed Culture & Spontaneous Fermentation

Atom Brewing is committed to mixed culture and spontaneous fermentation. We incorporate our natural surroundings and local agriculture in every beer we make. From day one our intention with each beer is to create a connection between people, places and experiences.

Old World Methodology

The art of brewing and love for old world methodologies always guided our vision at Atom Brewing. From our custom open top oak fermenters to the variety of hand selected used barrels, these, not rows of stainless tanks, make up the equipment that filled our brewery.

In 2015 we took an 80 year old building located in Olde Town Erie, Colorado and turned it into our barrel house. From the cedar-lined ceiling that allowed wild microflora to flourish and allowing nature to control most of the temperature, the space was designed in a way we felt would nurture and encourage the complexities we enjoy in the beers we create.

Today we are in the process of building a farm brewery in Upstate New York.

Becoming Atom Brewing

Over the course of four and a half years we transformed the property into a small Hobby Farm and Brewery, growing as many ingredients as we could to use in our beers on the property. We also moved to a unique way of brewing by having a 5 barrel copper kettle built which we brewed in over open wood fire. Within a year we added on by having a copper mash tun and coolship built, this was the beginning of our spontaneous beer program.

Word started to spread about this little brewery in Erie Colorado, who brewed in a copper kettle, using wood fire and wild yeast harvested on the property. Before we knew it, people were asking for our beers in places like Belgium, Italy, France, the Netherlands and Australia.

Jeff & Chris Porn

We have been kicking around the beer world for awhile, sure as most who own and operate a brewery. Our beer resume is not what defines the brewery, it is us as a couple that makes the brewery what it is. When we are together we are smiling laughing , having fun, and looking for the next adventure. Sometimes we will butt heads on the direction of our beers but in the end it only pushes us to go further, be more adventurous, and see the truth in our craft. One thing we completely agreed upon when we decided to start this adventure was that we were going to start small to be sure that everything was just the way we wanted it to be without distractions and that the beer took first priority.
